Sally's Paddock and the Savoury Cool Climate Wines of Victoria

When most people think of Australian wine, they often imagine bold, sun-drenched reds from the country’s warmer regions. But here at Brad’s Wine, we’re drawn to something a little more refined—the cool climate wines of Victoria. This southern state, with its coastal breezes and elevated landscapes, produces some of the most elegant and expressive wines in Australia.
Victoria’s wine history dates back to the 1850s gold rush, when European settlers brought vines and winemaking expertise to the region. By the late 19th century, Victoria was responsible for half of Australia’s wine production. Though the industry later faced challenges—from phylloxera to economic shifts—its revival in the 1960s marked the beginning of a new era, focused on quality, character, and regional identity.

Redbank 2019 Sally's Paddock
Pyrenees, Victoria, Australia
Today, Victoria is home to over 800 wineries across 21 distinctive wine regions. Unlike some of the larger producing states, Victoria’s cooler climate and limited irrigation mean that winemakers tend to focus on smaller-scale, high-quality production. It’s about crafting wines with personality—something we value deeply at Brad’s Wine.
Cool climate wines are renowned for their finesse and balance. The slower ripening of grapes helps preserve natural acidity and develop complex, refined flavours. These wines typically have a lighter body, lower alcohol, and higher acidity, making them ideal for producing exceptional styles of Pinot Noir, Chardonnay, and Shiraz. Victoria’s climate, positioned between Burgundy and Bordeaux, creates wines like Shiraz with notes of blackberry and pepper, Chardonnay with crisp green apple and lemon zest, and Pinot Noir with bright red fruit and lively acidity.
