Méthode Tasmanoise is a term used for sparkling wines made in Tasmania, Australia, using the traditional method (also known as Méthode Champenoise). This is the same technique used to create some of the world’s finest sparkling wines, including Champagne. The process involves a secondary fermentation in the bottle, which produces the bubbles and contributes to the wine’s complexity and depth of flavour.

In Méthode Tasmanoise, the process follows several steps: the grapes are handpicked early in the season to ensure high acidity, and the juice undergoes primary fermentation, converting sugar into alcohol. The base wine may then be blended to create the desired style. During the secondary fermentation, the wine is bottled with added yeast and sugar, which triggers the bubbles. The bottles are riddled (tilted and rotated) to move yeast sediment to the neck, then disgorged to remove the sediment. The wine is aged on its lees (dead yeast cells) for months or years, which adds complexity and texture before it is sealed with a cork.
